The Problem Beef is a major source of greenhouse gases, so with our catering partner, Levy Europe, we looked for alternatives. The Solution Phase 1 was the 50:50 signature burger made from half beef and half mushrooms.

This hybrid version had better nutritional value – less saturated fat and salt, more fibre – and a CO₂ reduction of 13.5% per kilo. Phase 2 was the 100% chicken burgers (kip burger in Dutch), resulting in a reduction of 72% less carbon per burger.…
